French Gingerbread

My DH is sharing a French Traditional Holiday recipe from his childhood today: French Gingerbread.

In France, Gingerbread is a very strong Alsacian tradition. Baked around St Nicholas (Dec 6th), it is often shaped like the saint, his donkey or other Holiday characters.

The Legend says St Nicholas comes each year and brings gifts and sweets to the “good” children. He is always followed by his companion  Père Fouettard, that threatens the little rascals with his switch.
